So we did something really sketchy this weekend…… We went to a honky tonk…..

Well, a Washington version of a honky tonk. Every patron was clad in denim & cowboy boots. All 83 televisions had CMT music videos on. It was just incredible.

To appropriately fit in, I ordered a blackberry cooler. Some sort of cocktail made out of the house moonshine. Naturally, it was served in a mason jar because those are the only things people in the south have to drink out of. I was in absolute heaven.

I have this thing where I like to go to the sketchiest (lamest) restaurants possible & see how much fun can be had. My friend Mallary got me hooked & I’ve never looked back. Like, get a gaggle of girls together, get all dolled up, go to the local Applebee’s & tell me it’s not the best night of your life. I DARE YOU.

Time: 30 minutes (prep + cooking) | Serves: 4 rolls


  • 1 lb. of shrimp, peeled + deveined + uncooked
  • 5 stalks of celery, chopped
  • 3/4 cup of green onion, diced
  • 1/2 head of red cabbage, chopped
  • 2 tbsp. of cilantro, chopped
  • 4 brioche hot dog rolls (do NOT skimp & use regular hotdog rolls you will ruin everything)
  • 2 tbsp. of butter
  • 1 tbsp. of flour
  • 1 tbsp. of garlic, minced
  • 1 tsp. of crushed red pepper
  • 1/2 cup of sriracha mayo (it’s out there, I swear)
  • 2 tbsp. of sriracha
  • 1 tsp. of crushed red pepper
  • Juice of a lime
  • S+P, to taste

How to:

  • Heat butter in a skillet over medium heat
  • Add flour + stir to make a roux
  • Add shrimp + coat, cook for 2-3 minutes
  • Add garlic + S+P, cook another 1-2 minute or until shrimp are cooked through
  • Meanwhile, combine mayo + sriracha + crushed red pepper + S+P + lime juice in a bowl
  • Toss in veggies
  • Remove shrimp from the skillet + give them a rough chop
  • Add shrimp + cilantro + S+P to sriracha mix
  • Scoop shrimp mix onto toasted brioche rolls + serve hot
  • Tuck yourself in between the roll + go night night on the shrimp pillows

So many of my ideas lately have come from this month’s issue of Cooking Light. I highly recommend if you’re looking for some inspiration!

      OMG you would really flourish in one. We didn’t line dance, but there is obviously a very large dance floor. When we were leaving the brave souls willing to dance were getting all set up. Oh SO serious. Apparently it’s a very happening place to meet other singles…………. I loved it!
