I’m going to need someone to explain this “traffic” phenomenon to me.

How is it created? No, I’m serious. I don’t understand. If we are all going the same way, at generally the same speed, WHAT IS THE MAJOR MALFUNCTION????

It’s the 21st century. I just feel like this is a problem we could have solved by now. We cured polio like 80 years ago. Yet I still crawl on the interstate. I cannot compute.

All to say, I sat in traffic for 3 hours this evening. THREE. 1 fender bender. The rest was just a plethora of motor vehicles. Like, just lots at one time. All minding their own business, going the same way. It probably doesn’t help that this region only has one major interstate. Like, not a city planner, but if I was, my city would have lots of roads, hospitals, shopping, food & an airport every 10 miles for emergency evacuations.

At least I always pack a snack when I drive anywhere. You just never know where the “traffic” will be.

 

 

Time: 30 minutes (prep + cooking) | Serves: 4

Ingredients:

  • 2 cups of cooked brown rice
  • 1 onion, diced
  • 3 tbsp. of garlic, minced
  • 1 tbsp. of ginger, minced
  • 1 can of baby corn, drained
  • 1 can of water chestnuts, drained
  • 1/2 cup of green onions, diced
  • 1 tbsp. of rice vinegar
  • 1/4 cup of soy sauce
  • 1 tbsp. of sriracha sauce
  • 1 tsp. of crushed red pepper
  • 1 tbsp. of olive oil
  • S+P, to taste

How to:

  • Heat olive oil in a large skillet or wok over medium-high heat
  • Add onion + S+P, cook for 2 minutes
  • Add garlic + ginger, cook another minute
  • Add rice + S+P, cook another 2 minutes
  • Add corn + chestnuts + green onion + rice vinegar + soy sauce, cook another 2 minutes
  • Add sriracha + crushed red pepper + some P, cook a final 2 minutes
  • Serve hot with extra green onion
  • Scoop with bare hands into mouth

    Omg. And then sometimes I think you’re in my head. My husband hates it when I drive because all I do is scream “if we could all just press on the gas instead of the brake we’d all be moving!!” And I think that’s a pretty smart observation; he, less so but then I found out about phantom breaking and learned of course I was right. Look it up- and keep the screaming in the car going!
