Let’s talk about this Ryan Adam’s’ 1989 album.
I SWOON. Look, I’m no Taylor Swift fan. In fact, I could name 12 reasons why she annoys the pants off of me. But the girl can write a catchy tune – ain’t no doubt about it. However, the auto-tune she relies on gives me a splitting headache.
Enter Ryan Adams. The man could sing my grocery list & I would melt into a pool of emotion. He’s turned all of the catchy pop tunes into acoustic ballads & I have done nothing but listen to the entire album on repeat for 48 hours. (It’s on Spotify for those who haven’t discovered this majesty).
I just enjoy when a song strikes me to the core so deeply that it stops me in my tracks & I immediately have to perform a lyrical routine or act out my own music video. Anyone with me? Bueller?
Bet a million dollars Mandy Moore is rueing the day she signed those divorce papers.
Time: 30 minutes (prep + cooking) | Serves: 4
- 1 package of soba noodles
- 1/2 head of cabbage, chopped
- 1 roasted red pepper, chopped
- 1/2 cup of cooked edamame
- 3 tbsp. of spicy teriyaki sauce
- 2 tbsp. of sriracha
- 1 tbsp. of soy sauce
- 1 tbsp. of rice wine vinegar
- 1 tsp. of ginger, ground
- 1 tbsp. of olive oil
How to:
- Whisk together teriyaki sauce + sriracha + soy sauce + rice wine vinegar + ginger
- Heat olive oil in a skillet over medium heat
- Add cabbage, red pepper + edamame + a tbsp. of sauce
- Cook for 3-4 minutes
- Meanwhile, cook soba noodles according to package directions
- Drain + rinse under cold water
- Add noodles to pan with veggies + mix well
- Stir in the remainder of the sauce
- Serve hot with sesame seeds
- Slurp noodles one at a time until you can’t take it anymore + have to smash your face in the bowl

Beautiful! And I also love Mr Adams…except for the times I saw him live and he was kicked off stage for over-intoxication 😬 But the man can sing..drunk or not;)
