I just don’t understand this UFC hype. Perhaps it’s because it really furthers our society in a better direction. Or maybe because it teaches us to be gentle to one another. Idk.

Truthfully, I’m just jealous that women don’t get paid to fight. Like, I recognize that women also get paid to kick the crap out of each other, but that’s not natural. What’s natural is when two women fight with their words.

Put me in a room with a woman of equal intellectual stature. Give us a topic to debate – person, place, thing, idea, television series, what have you. Then, just walk away & let us duel. THAT is a fight, people. UCFC – Ultimate Cat Fighting Championship. I really think the masses could get behind spending $79.99 on pay-per-view for this kind of raw entertainment.

Though, I am pleased a vegan won this weekend’s big fight which would be a perfect segue way to my recipe if it was vegan but gruyere exists so………

 

 

 

Time: 1 hour (prep + cooking) | Serves: 3-4

Ingredients:

  • 3 roma tomatoes, cut in half
  • 1 pint of cherry tomatoes
  • 1 large, white onion, sliced thin
  • 4 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 1 can of crushed tomatoes
  • 1 cup of packed basil leaves, plus more for serving
  • 2 tbsp. of olive oil
  • 1/2 cup of gruyere, shredded
  • 1 tsp. of crushed red pepper
  • S+P, to taste

How to:

  • Preheat oven to 425 degrees
  • On a lined baking sheet, arrange roma + cherry tomatoes
  • Drizzle with a tbsp. of olive oil + S+P
  • Roast for 20 minutes
  • Meanwhile, heat other tbsp. of olive oil in a pot over medium heat
  • Add onion + S+P, cook for 4-5 minutes
  • Add garlic, cook another minute
  • Add roasted tomatoes + S+P
  • Add vegetable stock + basil + crushed tomatoes + bring to a boil
  • Reduce to a simmer, add crushed red pepper + S+P
  • Use an immersion blender, or blender, to blend the soup together
  • Blend until smooth + creamy
  • Stir in gruyere
  • Serve hot with extra cheese + basil + a grilled cheese
  • Dip grilled cheese in soup, swirl around, smash into face, repeat until there is no more bread or soup left in your household

    Props for not using canned tomatoes! You are now my idol. I agree with Dana in that I LOVE UFC. Some of those dudes are serious eye candy. You know, the ones who aren’t deformed from getting their skulls bashed in. 😉 😉
