They are part exceptional chauffeur and part licensed therapist. It’s incredible! Enter Richard. A middle-aged man rocking a hawaiian shirt and driving a very large, like extended-cab and all, pick-up truck.
I had a pretty rough week & just needed to vent, ya know? There is nothing better than venting to a stranger. ESPECIALLY if said stranger is a practicing wizard with the magical power of speaking to your soul! He knew just what to say. He reassured me about life and friendships and career goals and the shortcuts of Memphis. It was what I needed.
I hope the stars align and you pick me up outside of brunch again one day, Richard.
Time: 2 1/2 hours (prep + cooking) | Serves: 4-6
Ingredients:
- 12 slices of whole wheat bread, cut in chunks
- 6 oz. of organic raspberries, rinsed
- 6 eggs, 4 with yolk + 2 just the egg white
- 2 1/2 cups of skim milk
- 5 tbsp. of maple syrup, + more for serving
- 2 tsp. of vanilla extract
- 2 tsp. of cinnamon
- Pinch of salt
- 1/4 cup of rolled oats
- 1/2 cup of almond slivers
How to:
- Arrange bread chunks + raspberries in an even layer in a greased baking dish
- In a bowl, combine eggs + milk + maple syrup + vanilla + cinnamon + salt
- Pour egg mixture over bread
- Cover + refrigerate for an hour
- Preheat oven to 350 degrees
- Top bake with oats + almonds
- Bake for 45-50 minutes, the bake will get super puffy and like heavenly pillows
- Serve warm with more maple syrup
- Grab blankie + sleep on top of french toast until it has absorbed you

Tah Dah! You are a magician, I have just opened the fridge and wondered what to do with some milk that needs using up (I don’t take milk, but every time someone visits, they want milk to put in their tea (YUK!) so I buy a pint and they use about an eggcup full and I am left with the rest to pour down the sink!
