Well, I want to wear less makeup, more flowy dresses and lots of costume jewelry, if that counts.

Earthy people have achieved an inner zen that I admire. They just seem content to me. They are at peace with their messy buns. I want that.

So I’m trying this out, right? I take a shower, let my hair dry naturally & head over to the Starbucks to do some work. My dad meets me & is all, “Why have you been crying?” I’m like, “Umm I’m not I just don’t have any makeup on.” He says, “No, you definitely look like you’ve been crying.” *Face palms* I explain that I’m trying to be more one with the earth because earthy people have zen. He said, “You think too much and need to wear makeup in public.”

Crossing “earthy” off of my new persona prospect list.

 

 

Time: 45 minutes (prep + cooking) | Serves: 4 burgers

Ingredients:

  • 1 sweet potato
  • 1 can of cannellini beans, rinsed + drained
  • 1/2 of an onion, diced
  • 2 tbsp. of garlic, minced
  • 1 cup of panko breadcrumbs
  • 2 tbsp. of all-purpose flour
  • 1 egg
  • 1 tsp. of cumin
  • 1 tsp. of chili powder
  • 1 tsp. of smoked paprika
  • 1/2 tsp. of oregano
  • 1/2 tsp. of garlic powder
  • S+P, to taste
  • 2 tbsp. of olive oil
  • Red onion, for serving
  • Avocado, for serving
  • Buns, for serving

How to:

  • Poke holes in sweet potato, wrap up in paper towel + microwave for 5 minutes
  • Turn potato over and microwave for another 5
  • In a bowl, mash cannellini beans
  • Add in cooled sweet potato
  • Add onion + garlic + panko + flour + cumin + chili powder + smoked paprika + oregano + garlic powder + S+P
  • Add egg + combine well
  • Refrigerate mixture for 20 minutes
  • Heat olive oil in a large skiller over medium heat
  • Form mixture into patties
  • Cook 2 at a time, 4-5 minutes on each side or until crispy
  • Serve hot topped with red onion + avocado
  • Smash this on your face it’s luxurious

    You’re a riot! And your dad’s pretty funny too! My husband always jokingly says I should put makeup on before going out so I don’t “scare the masses”…LOL 🙂
