Not that I, personally, am doing any projects, but I am overseeing.

This weekend, Garr worked on painting our kitchen cabinets. They were the darkest brown you’ve ever seen with no hardware and just kind of drab. My dream has been to have white kitchen cabinets basically since Pinterest launched. Well, he made them come true! He and some of our pals started painting this weekend and the first thing he said as he made his first brushstroke was, “Yeah, that’s not good…” so it’s really surprising they turned out as well as they did. We also added hardware and as Garr was putting them on he was like, “Oh no…” and we realized he drilled the holes incorrectly on about 3/4th of the cabinets. I love my handyman.

Then I cooked & grease splattered on all of them & the dream went into the dumps.

 

 

Ingredients:

  • 1 can of chickpeas, rinsed + drained
  • 1 cup of strawberries, sliced
  • 1 cup of blueberries
  • 1 cub of blackberries
  • 1/4 cup of walnuts
  • 6 cups of mixed greens
  • 1 tsp. of cinnamon
  • 1/2 tsp. of crushed red pepper
  • 2 tbsp. of apple cider vinegar
  • 2 tbsp. of agave
  • 1 tsp. of dijon mustard
  • 1 shallot, minced
  • 1/3 cup of olive oil
  • S+P, to taste

How to:

  • Preheat oven to 425
  • Arrange chickpeas on a lined baking sheet + drizzle with 1 tsp. of olive oil + cinnamon + red pepper + S+P
  • Roast for 25-30 minutes, tossing once
  • Meanwhile, whisk together apple cider vinegar + agave + mustard + shallot + remaining olive oil + S+P
  • Meanwhile toast your walnuts for a few minutes over low-medium heat, tossing often
  • To assemble, add greens to a bowl + top with berries + chickpeas + walnuts + dressing
  • Serve chilled
  • Prepare a bowl for yourself + sit out on your porch + feel the health + sunshine running through your veins

My husband is the ultimate hunk-asaurus. He’s just a built, beautiful, big ole bear of a man. He’s full of energy and is literally always moving. Even when relaxing, he’s moving, i.e. biting his nails, shaking his legs, tapping his toes – the man cannot sit still.

Lately he’s been talking about needing to stretch more. I capitalized on this opportunity by suggesting an activity I can beat him at – YOGA!!! Marriage is fun. Anyways, we’re all set. We’re on our mats (the carpet) and our minds are right. I turn the video on and the nice little woman calls us sweet little muffins or something and he bursts into a giggle fit and threatens to quit. I pull him back in, though, and we’re rolling. We’re in mountain pose and he starts bouncing. I’m all “stop moving & breathe!” and he is all “I can’t I love mountain pose!!!!” Happy baby pose is also a crowd favorite. I’m thinking this could be our new thing when all of a sudden, the toots start to roll in. My bubble of zen has popped.

We finish the session and he’s like, “wow yeah I think I just found my chi.” He doesn’t know what that means and still cannot pronounce namaste.

 

Time: 45 minutes (prep + cooking) | Serves: Like a dozen cakeypans!

Ingredients:

  • 2 cups of whole wheat flour
  • 2 tsp. of baking powder
  • 1/2 tsp. of baking soda
  • 1 tsp. of cinnamon
  • Pinch of salt
  • 1 cup of blueberry Greek yogurt (I even used the kind with REAL BLUEBERRRRRRIEESSS)
  • 1 1/2 cups of skim milk
  • 1/4 cup of maple syrup
  • 2 eggs
  • 2 tsp. of vanilla extract
  • 3 tbsp. of butter, melted + cooled
  • 2 cups of fresh blueberries, rinsed

How to:

  • In a large bowl, combine flour + baking powder + baking soda + cinnamon + salt
  • In another bowl, combine yogurt + milk + syrup + eggs + vanilla
  • Pour the wet ingredients into the dry + whisk
  • Whisk in butter
  • Fold in blueberries
  • Coat a skillet with cooking spray + heat over just under medium heat
  • Using a 1/4 cup scoop, scoop some batter into the pan
  • Cook until lil bubbles start to form in the top + flip, cook another 2 minutes
  • Repeat
  • Stack cakeypans as high as possible + body slam self of top of pile + let them explode everywhere

Not from food that is too temperature hot, but from food that has been soaking in Asian chili peppers for 40 years + then takes a bubble bath in red pepper flakes.

It’s this local Chinese restaurant. They have this fried rice dish that has a literal disclaimer on it for being so spicy. Do I order it every time? Yes. Do I always regret? Most obviously.

The past couple of times I’ve ordered this I’ve been a little disappointed. It just hasn’t been as spicy as my wretched body has become accustomed to. So I order it last night, thinking, “Eh, it’ll be ~mild~.” It comes to the table. I’m pleasantly surprised by the looks of things – red pepper flakes allllll up in this bowl. I’m ready – mentally and physically (loose dress). I get about half way through and the usual sweating happens. Two glasses of water & I’m fine, a champ. I finish the meal. Like, I eat every bite of this monster fried rice. Then the dizziness sets in. I am on another planet. A planet I think must be similar to hell because there are flames and dragons everywhere. The sweat is now coming out of my head, as in the top of my hair is damp. I rub my tongue on the roof of my mouth and realize it’s all numb and there are probably no longer taste buds there.

Ingredients:

  • 2 cups of frozen blueberries
  • 1 banana, sliced
  • 1/2 tsp. of vanilla extract
  • 1 1/2 cups of skim milk
  • Banana, for topping
  • Blueberries, for topping
  • Granola, for topping

How to:

  • Combine frozen blueberries + sliced banana + vanilla + milk in a blender or bullet
  • Blend until smooth
  • Pour into a bowl + top with bananas + blueberries + granola
  • Hold breath + dive face-first into bowl + enjoy luxurious smoothie facial
