It’s just so brilliant & handy. Sometimes you’re out & about & the light hits you just right & no one is there to capture it for you. & a normal selfie just can’t get the angle. Enter the selfie stick, basically my knight in shining armor.

Time: 30 minutes (prep + cooking) | Serves: 6 pieces of fish

Ingredients:

  • 6 cutlets of flounder
  • 2 mangoes, diced
  • 1 red pepper, diced
  • 1/2 red onion, diced
  • 1 jalapeno, diced
  • 2 tbsp. of cilantro, chopped
  • Juice of 1 lime
  • S+P, to taste

How to:

  • Preheat grill
  • In a bowl, combine mangoes + red pepper + red onion + jalapeno + cilantro + lime juice + S+P
  • Pat dry fish + sprinkle each side with S+P
  • Lay on the grill + cook for 5 minutes
  • Flip + cook another 3-4 minutes
  • Smother in salsa + serve
  • Eat every lil fish cause this is that healthy I think

It’s not a secret. I’m either binge watching something, cooking or sleeping. I just don’t have time to sweat. My metabolism has, thus far, been my BFF. I eat all the things I want & nothing happens. When it does happen, I stop eating Oreos & it stops happening. That’s just how it’s worked for me. I didn’t choose this life, OK?

As I enter into my old age, I find my skin starting to just kind of hang on my bones. My body is betraying me & I’m upset. Luckily, my husband is basically a body builder. His new hobby is something called “olympic weight lifting” – I have no idea. I’ve resisted lifting weights with him until my Women’s Health had an article telling me that it would not bulk me up & make me look I’m on roids!!! So I did it.

It was all fine & dandy. I’m naturally good at just about everything so lifting a barbell over my head was nothing different. Except no one told me what my body would feel like two days later. The only picture I can paint is me walking around like a giant branch is up my butt. It’s just unreal. Some muscles in my legs have decided to go completely numb & stop working???? Idk. I’m over it, though.

Time: 30 minutes (prep + cooking) | Serves: 2

Ingredients:

  • 1.5 pounds of cajun chicken sausage, cut in chunks
  • 1 red pepper, sliced
  • 1 green pepper, sliced
  • 1 yellow pepper, sliced
  • 1 onion, sliced
  • 1 tbsp. of olive oil
  • S+P, to taste

How to:

  • Preheat oven to 400 degrees
  • On a bare baking sheet, arrange peppers + onions
  • Drizzle with olive oil + S+P
  • Roast in the oven for 12-14 minutes
  • Meanwhile, cook sausage in a large skillet over medium heat, browning to your liking
  • Once peppers are roasted + sausage is browned, add peppers to the skillet + combine
  • Serve hot
  • Eat this daily because it’s paleo + it’s acceptable by law

Garr & I tried a new church yesterday & the first thing that has to happen after spending time with Jesus is FOOOOOOOD. I typically cry so much I’m just exhausted & need fuel.

What is right down the street from this church? YOU GUESSED IT – a Red Robin. Imagine like screeching tires & curb jumping as I force him to turn into the parking lot. No, I don’t eat burgers. Not the point. The POINT is a little something I like to call bottomless french fries. Did we partake? Absolutely. Did I look pregnant the rest of the day? Definitely. WORTH IT.

So I couldn’t prepare the potatoes I had planned to make with dinner because I literally would have exploded into 1,000 Rachel pieces.

 

 

Time: 3 hours (prep + cooking) | Serves: 6 drummies

 

Ingredients:

  • 6 chicken drummies
  • 2 tbsp. of onion salt
  • 2 tbsp. of garlic salt
  • 1 tsp. of white pepper
  • 1 tbsp. of cinnamon
  • 1 tsp. of nutmeg
  • 1 tbsp. of ground ginger
  • 1 tbsp. of smoked paprika
  • 1 tbsp. of all spice
  • 1 tsp. of coriander
  • 1 tsp. of crushed red pepper
  • 1 tsp. of cayenne pepper
  • 3 tbsp. of coconut sugar
  • S+P, to taste
  • 1 tbsp. of olive oil

How to:

  • In a large bowl, combine all seasoning + S+P
  • Pat dry chicken + add to the bowl
  • Coat chicken in seasoning + cover the bowl, letting sit in the fridge for 2 hours
  • Preheat oven to 425 degrees
  • Lay chicken on a lined baking sheet
  • Drizzle with olive oil
  • Bake for 40-45 minutes, turning once in the middle
  • Serve hot
  • Make more seasoning + put it on everything you eat here on out
