Another weekend, another freakin’ fair I end up at.

The Washington state fair is happening and it’s the biggest hillbilly parade I think I’ve ever seen.

I know I’m from Tennessee & I have very little room to discuss this topic, but I can’t keep my mouth shut any longer. We walked in & our friend was like, “We gotta watch the Mutton Busting!” I’ll give you all a couple of seconds to guess what that is before I reveal to you the disturbing answer.

We walk up to this miniature bull riding pit sans all of the bulls. Instead, there is a herd of sheep in the corner. (Is it a herd if it’s sheep? Idk). There is an obnoxious announcer in leather chaps. He blows his horn & out comes an angry sheep with a HUMAN CHILD ON IT’S BACK. The child soon falls off & gets physically trampled by the sheep. The parents of said child are hooping & hollering like their spawn has not just gotten run over by a farm animal. I’m not a mother, but who willingly signs a child up for this? There are literally one million other activities that are safer than Mutton Busting.

I did, however, get some gnarly popcorn shrimp out of a trailer so it was a good day.

 

 

Time: 1 hour (prep + cooking) | Serves: 5 stuffed pancakes

Ingredients:

  • 3/4 cup of whole wheat flour
  • 3 tbsp. of cornmeal
  • 3 tbsp. of rolled oats
  • 2 tbsp. of granulated cane sugar
  • 1/2 tsp. of baking soda
  • 1/2 tsp. of baking powder
  • 1/2 tsp. of salt
  • 1.5 cups of skim milk
  • 1 egg
  • 2 tbsp. of butter + more for cooking
  • Peanut butter, for stuffing
  • Strawberry jelly, for stuffing

How to:

  • Whisk together dry ingredients through salt in a large bowl
  • Add milk + egg + butter, whisk
  • Heat some butter in a nonstick pan over low-medium heat
  • Pour 1/4 cup of batter into the pan, cook for 2-3 minutes or until it starts bubbling
  • Flip pancake + cook another 2-3 minutes, remove from pan
  • Add another 1/4 cup of batter, cook for 2-3 minutes
  • Meanwhile, spread other pancake with plenty of PB&J
  • Add to the pancake in the pan + flip, cook for another 2-3 minutes
  • Repeat until all of the batter is gone
  • Must rub pancakes all over face – do not skip this the warm PB is exfoliating

I planted flowers for, like, 45 minutes this weekend. Did I know how to do so going into it? Not at all. But something about the flowers, dirt, & bugs just awakened my soul. I just instinctively knew how to dig a hole.

Time: 45 minutes (prep + cooking) | Serves: 8 pancakes

Ingredients

  • 2 eggs
  • 2 bananas
  • 2 tsp. of baking powder
  • 2 tbsp. of coconut oil
  • 1 tsp. of vanilla extract
  • 2 tbsp. of butter
  • 1/2 cup of milk
  • 1/4 cup of oats
  • 1/4 cup of almond meal
  • 1/2 cup of all-purpose flour
  • 1 package of chocolate chips, yes the whole thing
  • Maple syrup for serving,
  • Bacon, for serving

How to:

  • Combine eggs + bananas in a large bowl
  • Add baking powder + coconut oil + extract + butter + milk + oats + almond meal + flour
  • Fold in chocolate chips
  • Head butter in a skillet or on a griddle over low-med heat
  • Add pancake batter 1/4 cup at a time
  • Cook 3 minutes on each side
  • Repeat with rest of batter
  • Serve hot with maple syrup + crispy bacon
  • Watch how exponentially your husband’s love for you grows
