Riddle I can’t solve: why Christmas decorations cost 83 million dollars.

I have been a full-blown, emerging adult for, like, four years now, and have gone four Christmases sans decorations.

It is not because I am the Grinch, though I am the world champion Grinch face-maker and will one day prove this to you all, but I digress!

It is because I do not see the point spending triple digits on items that are displayed in my home for 4 weeks max. The only person around to appreciate them is Topanga and she’s color blind. Alas, my festive hunk decided we simply MUST join the masses this year and decorate. I will admit, it was nice drinking pomosas and dancing to Christmas music and having Garr hook the ornaments for me so I could really focus on my vision for the tree.

My vision is “red and gold” because I did not want to spend money on a third color of ornaments.

 

 

Time: 1 1/2 hours (prep + cooking) | Serves: 6

Ingredients:

  • 1 can of whole tomatoes
  • 2 cans of cannellini beans, rinsed + drained
  • 1 yellow onion, diced
  • 2 carrots, peeled + chopped
  • 2 tbsp. of garlic, minced
  • 1 tbsp. of white wine vinegar
  • 3 cups of vegetable broth
  • 1/4 cup of raw cashews
  • 4 sprigs of fresh thyme
  • 1 cup of spinach
  • 1 tbsp. of olive oil
  • 1 tbsp. of crushed red pepper
  • S+P, to taste

How to:

  • Heat oil in a stock pot over low-medium heat
  • Add onion + S+P, cook for 3-4 minutes
  • Add garlic + carrots + S+P, cook another 10 minutes
  • Add tomatoes + cook for another 8 minutes
  • Add vinegar + 1 can of white beans + broth + thyme + crushed red pepper + S+P, simmer for 20 minutes
  • Turn off heat + remove thyme springs
  • Blend with an immersion blender until smooth
  • Add remaining beans + spinach + a lil more S+P if you like
  • Serve hot
  • Tuck in your bib + settle into your highchair + have someone spoon feed you this

I was stricken with a heinous sinus infection and some sort of mucus monster like the kind on the commercials crawled in my lungs & decided to set up shop for 6 days. It was righteous.

It was a wake-up call, though, that I need a registered nurse on speed dial. Do you know how many medical questions I have on a daily basis? For instance, is my heart supposed to palpitate this much? Is the rash on my shin a bug bite or cancer? Do other people’s feet smell this bad? Am I supposed to cry every day?

Perhaps my health issues are too great for just one soul to heal.

 

 

 

Time: 35 minutes (prep + cooking) | Serves: 3-4 gyros

Ingredients:

  • 1 can of chickpeas, drained + rinsed
  • 1 cups of plain Greek yogurt
  • 1/2 cup of shredded cucumber
  • 2 tbsp. of lemon juice
  • 2 tbsp. of garlic, minced
  • 1/2 red onion, sliced thin
  • 1 tomato, sliced thin
  • 1/2 cup of spinach leaves
  • Pita flatbreads
  • 1 tbsp. of paprika
  • 1 tsp. of chili powder
  • 1 tsp. of cayenne
  • S+P, to taste
  • 1 tbsp. of olive oil

How to:

  • Preheat oven to 400  degrees
  • In a bowl, combine chickpeas + olive oil + paprika + chili powder + cayenne + S+P
  • Roast for about 20 minutes or until crisp to your desire
  • Meanwhile, salt cucumber + let drain on a paper towel for about 10 minutes
  • Combine yogurt + cucumber + lemon juice + garlic + S+P
  • In a pita, spread some tzatziki + add some spinach + onion + tomatoes + chickpeas
  • Shove entire gyro into mouth at one time to ensure best flavor profile

Well, specifically mistakes made using a piece of technology. Though, I’m still holding out for time travel so I can go back to the 4th grade and spell allowed instead of aloud in the spelling bee, but I’m over it.

I was with my dad and we were scrolling through his DVR. He stops on this documentary about a ship he floated around on in the Navy. He cherishes this documentary and suggests it every time we are watching the tube. I always pout and say, “Eww boring I want to watch Gilmore Girls re-runs.” He typically scoffs & moves on. This time, this fatal time, he clicks an x button. *Poof* The show is gone. PERMANENTLY gone. I gasp, he crumbles into a ball. We spend the rest of our evening googling how to undo this action and discover that it is impossible. They have created a device that records 12 shows at once yet we don’t get the occasional re-do.

Don’t get me started on the absolute NECESSITY that is undoing a text message. Like, we are human beings. We make mistakes. Give us a device that allows us to share our deepest thoughts at any time, day or night, and we are bound to have some regrets, am I right?! And what’s Siri’s role in all of this? I don’t need her to tell me the 18th president on the spot, I need her to proofread my text messages and tell me if I sound mean before I send something. Or if I yell, “STOP THAT TEXT, SIRI!” she automatically halts the sending process. Make yourself useful, girl.

Apple, Comcast, Big Brother, hook a girl up with an undo button.

 

 

 

Time: 1 hour (prep + cooking) | Serves: 2

Ingredients:

  • 1 head of cauliflower, chopped
  • 1 egg
  • 1/4 cup of parmesan cheese, + more for serving
  • 1 tsp. of oregano
  • 1 can of crushed tomatoes
  • 2-3 tomatoes off the vine
  • 3-4 oz. of fresh mozzarella cheese
  • 2 tbsp. of fresh basil, chopped
  • 1 tsp. of crushed red pepper
  • 1 tbsp. of olive oil
  • S+P, to taste

How to:

  • Preheat oven to 425 degrees
  • Place chopped cauliflower pieces in a food processor, pulse until tiny, fluffy pieces
  • Transfer to a microwave safe bowl, cover with plastic wrap + microwave for 4 minutes
  • Once cool, add egg + cheese + oregano + S+P
  • Combine cauliflower dough + form into a pizza crust shape, arrange on a lined baking sheet
  • Bake for 12 minutes
  • Top crust with crushed tomatoes + tomatoes + cheese + olive oil, bake for another 10 minutes
  • Top with crushed red pepper + S+P + basil
  • Serve hot
  • Pretend the pizza is a choo-choo train and the destination station is your pie hole
