All I know is Garr got to this menu on our TV that listed all of the movies currently on. I see that Ghost is on & my mind goes berserk. MUST. WATCH. PATRICK. SWAYZE. NOW.

After convincing him it’s a boy movie (LOL), he was able to rewind it to the beginning. Meaning, I think I have DVR. Meaning, I have entered the 2010’s and there is no going back for me. I am a believer! What sadness this space device could have saved me throughout my youth the many times I stumbled upon a halfway over Crossroads or Blue Crush.

I may or may not have made Garrett play Unchained Melody on repeat the rest of the evening.

 

 

 

Time: 25 minutes (prep + cooking) | Serves: 4-6

Ingredients:

  • 1 head of cauliflower, rinsed + chopped in florets
  • 2 tbsp. of low fat cream cheese
  • 1/4 cup of parmesan cheese
  • 1 tbsp. of garlic, minced (do not go by the amount in the photo, I beg of you, I used too much & am adjusting the recipe for you because I have a heart)
  • S+P, to taste
  • Butter, for serving
  • Chives, for serving

How to:

  • Bring a pot of salted water to a boil
  • Add cauliflower + cook for 6 minutes, drain
  • Add hot cauliflower to food processor + add cream cheese + parmesan + garlic + S+P
  • Process until smooth
  • Serve warm with butter + chives
  • Fashion scoop of mash into a pillow + lay your sweet head upon it + dream of gravy boats

He says, “Who is that?”

Time: 30 minutes (prep + cooking) | Serves: 4-6

Ingredients:

  • 1 package of whole wheat pasta
  • 1 lemon
  • 2 tbsp. of butter
  • 1 tbsp. of olive oil
  • 1/4 cup of dry white wine
  • 1 onion, diced
  • 2 tbsp. of garlic, minced
  • 1 tsp. of crushed red pepper
  • 1 tsp. of dried parsley flakes
  • S+P, to taste
  • Parsley, for serving

How to:

  • Cook pasta to al dente, drain
  • Heat olive oil + butter in a skillet over medium heat
  • Add onion + S+P, cook for 3-4 minutes
  • Add garlic, cook another minute
  • Add wine + 1/2 the lemon juice + crushed red pepper + dried parsley + S+P, cook another 2-3 minutes
  • Add pasta + toss to coat
  • Serve with fresh parsley + lemon wedges
  • Fashion wig out of noodles + wear lemon butter pasta wig to next party

We are just so alike. We have a similar sense of humor, share similar hobbies, and have similar taste in baby names. She just named her baby Luna and I named a dog that once – she shed everywhere and had about as much sense as a wet blanket but she was quite cute.

I struggle to find anything we don’t have in common. We’re both in the business of helping people, her posing for the swimsuit edition of Sports Illustrated and me in nonprofit work. We both have great loves, hers writes legendary (see what I did there?) love songs about her and mine draws stick figure pictures of us dancing in flower patches. Too many parallels.

Alas, she’s a published cookbook author and I am still writing a food blog but I’m like totally not bitter about it!

 

 

Time: 30 minutes (prep + cooking) | Serves: 4

Ingredients:

  • 1 pound of fresh green beans
  • 1/4 cup of sugar
  • 2 tbsp. of butter
  • 1/4 cup slivered almonds, chopped
  • S+P, to taste

How to:

  • In a large skillet, combine 1 cup of water + the sugar + some S
  • Bring to a boil, stirring until the sugar is dissolved
  • Add green beans, cover + cook until the sugar water begins to reduce, about 9 minutes
  • Uncover + stir + continue cooking for 7 minutes
  • Transfer to serving dish + top with butter + pepper + almonds
